Roasted Salmon with Lemon & Dates

This salmon recipe might just break the internet.
We’re talking tender baked salmon over asparagus… layered with garlic, lemon, Sergio’s Seasoning from Golden Steer, a generous glug of Terra Delyssa olive oil, and the secret ingredient that makes it unforgettable… chopped Deglet Noor dates from Terra Delyssa. When those dates roast with the salmon, garlic, and olive oil, something magical happens. The sweetness melts into the savory juices, creating the kind of sauce you’ll want to drink with a spoon. I sprinkle on a little harissa powder for warmth, roast at 400°F for 20 minutes, then drop in a couple pats of butter after baking for the richest, silkiest finish. Serve over rice and prepare to be obsessed.
Recipe:
4 salmon filets
1 bunch asparagus, trimmed
4 cloves garlic, minced (plus extra to taste)
1 lemon, thinly sliced
2 tsp Sergio’s Seasoning (Golden Steer)
2–3 tbsp Terra Delyssa olive oil
6–8 Deglet Noor dates (Terra Delyssa), chopped
1 tsp harissa powder
2 tbsp butter (added after roasting)
How to make it:
Preheat oven to 400°F. Lay asparagus in a baking dish, place salmon on top.Sprinkle with garlic, lemon slices, Sergio’s Seasoning, and harissa powder. Drizzle with olive oil, scatter chopped dates over the top. Roast uncovered for 20 minutes. Add butter after baking, serve over rice, and let the sauce blow your mind.
