Easy Weeknight Lasagna Soup

Hello, Lasagna Soup! I had to join in all the fun for Soup Season. I’m not a huge lasagna fan typically, but I absolutely LOVE lasagna soup!

1 lb ground beef
1 white onion, chopped
1 green bell pepper, chopped
4 cloves garlic, chopped
1 can San Marzano tomatoes
1 package Good Seasons Italian seasoning
2 cups chicken broth
1 container ricotta cheese
1/2-1 cup Parmesan cheese
Garlic powder
Crushed red pepper
Italian seasoning
Salt & pepper
1/2 package lasagna noodles
In a pan, ground your beef and saute onions, garlic, and bell pepper. Add your Italian seasoning and salt and pepper. Add tomatoes and chicken broth and cook on medium low for 20 minutes. In a separate bowl mix ricotta and Parmesan cheese, along with spices. Set aside. Break up and Add noodles to your soup. Once the noodles are done, scoop into a bowl and top with ricotta mixture. Top with more Parmesan if you like. Enjoy!!!
