One Pan Creamy Greek Chicken Orzo

This is the kind of weeknight dinner that feels fancy but comes together with pantry staples. Everything bakes in one dish until creamy, cheesy, and loaded with all those bold Mediterranean flavors.



Here’s how to make it:


Ingredients


• 1 package orzo pasta


• 4 chicken thighs, diced


• 1 jar artichokes, drained


• 1 red onion, sliced


• 1 jar Kalamata olives, drained


• 1 can diced tomatoes


• 1 jar Greek vinaigrette


• Fill vinaigrette jar halfway with heavy cream, shake and pour over


• 1 ½ cups chicken broth


• 1 cup parmesan cheese (divided)


• Cavender’s Greek seasoning to taste



Directions


1. Add orzo, chicken, artichokes, onion, olives, tomatoes, vinaigrette + cream, broth, ½ cup parmesan, and Cavender’s into a baking dish.


2. Cover with foil and bake at 400°F for 40 minutes.


3. Uncover, sprinkle on the rest of the parmesan, and bake another 20 minutes.


4. Stir it all together and dig in!
