They’re cozy, satisfying, and pack over 50 grams of protein per serving, without a single bite of bland grilled chicken.

This is one of my go to easy weeknight meals that feels indulgent but fuels you up. It’s protein packed, family friendly, and comes together fast with simple ingredients you might already have on hand. Bonus: it starts with a rotisserie chicken and low carb tortillas, so there’s no need to slow roast anything after a long day.

Ingredients

  • 1 rotisserie chicken, shredded

  • 1 cup cottage cheese

  • 1 (4 oz) can diced green chiles

  • 8 low carb tortillas (I used Carb Balance)

  • 1 cup sour cream

  • 1 cup spicy green salsa (or your favorite brand)

  • 1 ½ cups sharp cheddar cheese, divided

  • 1 tbsp taco seasoning


How to Make Green Chile Enchiladas


  1. Preheat your oven to 375°F and lightly grease a baking dish.

  2. In a bowl, mix the shredded rotisserie chicken with cottage cheese and diced green chiles. This is your creamy, protein loaded filling.

  3. In a separate bowl, stir together sour cream, green salsa, ½ cup of the cheddar cheese, and taco seasoning. This becomes your flavorful enchilada sauce.

  4. Spoon the chicken mixture into the low carb tortillas and roll them up tightly. Place them seam side down in the prepared baking dish.

  5. Pour the sour cream and salsa sauce over the top of the enchiladas, spreading it out evenly.

  6. Sprinkle the remaining sharp cheddar cheese all over the top.

  7. Bake for 25 minutes, or until golden and bubbly.


Let it cool for a few minutes before serving and brace yourself for everyone asking for seconds.
